This course is for supervisors and managers in the catering industry who will have a responsibility for implementing food hygiene policies. Food safety training is essential to ensure not only compliance with the law, but for food handlers and businesses to have a proper understanding of their responsibilities and to safeguard the health and safety of your customers and ensure a statutory requirement with regard to food handling and storage are met, it is essential that all staff whose work could affect the provision of food, understand the principles of safe food handling and basic food hygiene.
There are no formal entry requirements however candidates attending this course should have the basic knowledge from the Level 2 Award in Food Safety or relevant industrial catering experience in food safety systems.
You will cover all aspects in understanding responsibilities and managing food safety systems whilst gaining an insight into the new legislation and policies. The aspects that you will cover are :
  Bacteriology
  Food Poisoning and food borne disease
  Physical contamination of food and its prevention
  Food storage and temperature control
  Food preservation
  Design and construction of food premises and equipment
  Cleaning and disinfection
  Pest control
  Personal hygiene
  Legislation - awareness of current legislation as it relates to the sale of food
  Supervisory management
You can progress onto the Advanced Food Safety qualification. You will have a recognised qualification demonstrating your competence that will be accepted in all catering operations.
